EGUSI STEW
Ingredients
• 200 g Kotoko Egusi (Melon Seed)
• Tomatoes
• Kotoko Palm Oil
• Salted Fish
• 1 Onions (chopped)
• 1 Crayfish Maggi Cube
• Salt
• Kotoko Grind Hot Pepper
• 1 Can of Mackerel in water / Tomato Sauce
Method
Put Palm Oil with Onion on fine
Add in Salted Fish, and cook well.
Add the tomatoes, pepper and mackerel
Mix the grind Egusi with a little water and salt and pour into sauce
Let the sauce cook very well on low heat. Season to taste.
Cook for 40 minutes at 380°F
Serve with Boiled Yam, Plantain, R ice and Gari

Ingredients
4 over ripe plantains
100 g Kotoko Palm Oil
Onion
200 g Corn Dough Flour or Rice Flour
Pepper
Salt
Kotoko Ginger Powder
Method
Peel the ripe Plantain
Mash in a blender until free from lumps
Add the corn flour, ginger, onion, pepper, salt and mix to blend
Add the Palm Oil
Pour into a backing pan greased with Palm Oil
Bake in a hot oven for 20-40 minutes at 380°F
Serve with roasted Peanuts |
